Thermostat Valve - mystery

This is a good stove that heats 5 radiators, including a big one in our living room. We still don’t understand what the thermostat valve does and what number it should be at? We keep it at 1, but what would it mean to have it at 5?

Stove expert replied: The thermostat valve helps to regulate the air control based on the rate the fire is burning. The installation and user manual should give further guidance here.
